Maple Oatmeal Muffins

These are so good with some butter and tea for a morning brunch and only take 10 minutes to throw together!

2 eggs
1/2 c. Brown sugar
1 1/4 c. buttermilk (substitute whole milk)
3/4 cup maple syrup
1 1/4 c. whole wheat flour
1 1/2 c. rolled oats + 3 TBS for sprinkling
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

preheat oven to 400 degrees F.  Grease muffin tins or line with paper. 
Makes 12.  Bake for 20 minutes

Breakfast ALERT!

I was inspired by my good friend Micah to try making granola and eating it for breakfast after my work outs! It was so fun to make and I look forward to enjoying a healthy home made breakfast every morning starting Monday!

Here's the recipe I made up by somewhat following Micah's recipe (didn't have the same ingredients but made do) but it turned out amazing!!!!!


Mix dry ingredients
10 cups Old Fashioned rolled oats
2 cups coconut
2 cups honey roasted sunflower seeds
1 1/2 cups Wheat Bran (wheat germ) would be healthier yet.
1 1/2 cup Raisins (all I had)
1/2 cup flax (ground in coffee grinder)
1 1/2 Walnuts (ground)

bring to boil
1 1/3 oil
2 c. honey
1 TBS Cinnamon

pour over dry ingredients and mix well. Spread thin over cookie sheets and bake at 325 for 20-25 minutes 
I had this huge cheese ball container that I had saved and didn't even know what to use it for.. it's so big that next time I'm going to double this batch and it will all fit perfectly! 


I would have put more flax and sesame seed if I had them.  You can put whatever you want actually. You can put dry milk, craisins or other nuts or dried fruit that you like. I'll probably try something a little different next time just for fun!

Giant Focaccia Sandwhich Recipe

I copied a friend the other night and we both made this very good flat bread that she found online. Even if you've never made bread... you should definitely give this a try as it was extremely easy!  I made mine with pure whole wheat flour... and it still turned out. I recommend letting it rise twice like the recipe says especially if you use the whole wheat.   Mine isn't as pretty.. I didn't have a round pan so used a 9x13 inch cookie sheet and folded the dough over so it was only on half. It was about the perfect thickness.  You can add whatever filling you like... I used chicken, lettuce, cheese, mayo, mustard and tomato (not in the pic)
