Mom to a Five year old!!!

My eldest son turned five today!  I can't believe how time sure flies. It seems like just yesterday I was holding and nursing him in my arms. I knew it would go fast... but I'm trying NOT to think about that...but enjoy every minute of every day.

Colton Travis King was born at 2:32 am on my parents ranch.  He was my first of three homebirth experiences. His was definitely my longest and hardest one!  But after 2 and a half hours of pushing, he finally arrived.  Though a little bruised, he was our beautiful, precious little boy!  I really do remember it as if it were yesterday.  Sean and I laid on the bed in awe that this little life and blessing from the Lord was finally here!  We prayed over him and thanked God over and over again...

Transformation story
I started the Insanity work out June 21st of 2010 after my husband and I watched the TV commercial. My first thoughts were.. yeah, right! Who can do that! Even though my husband is in the Army and knows the true meaning of PT...(Physical Training) I thought "I" could never do something that intense. Especially with THREE kids to watch and a house to maintain. I never thought I would have the energy or time to fit it in my schedule. After watching the commercial a second time... my husband said, "honey, if you think you want to try this, I'll order it for you"... by this point I was READY! My baby was 9 months old.. I had lost all my baby weight but I was completely out of shape. No energy and a loose un-sexy, out of shape body! Long story short... I have completely changed my lifestyle and I feel better than I have ever felt in my life! Not only did I have to change my exercise routines but I had to change the way I ate. Sure I tried to eat healthy before but after getting started on Shaun T's 60 day plan I was challenged to follow the advice on eating better, higher protein meals to fuel my body. It's never been so easy. I guess I felt like I had worked so hard (during my work out) that why would I want to eat anything that wasn't going to help me. I'd just be wasting my time. Thanks to my husband having faith in me and giving me the support I needed.. I did something I thought I could never do.  I lost 3 inches around my waist and got the toning that I desired. Most importantly I feel great and have more energy.

 Before Insanity... I wouldn't be caught dead in a bikini :) I wont say my tummy is as flat as I'd like.. but after having three children I am happy to be where I am.

almost a year....

I've been super duper bad about blogging on this site for the last several months!  My life is crazy to say the least.

It's been almost a year since I started Insanity.  That is just incredible. I just got off a two week break from it since Sean was home. But I started again on Monday...  I thought I could push harder than when I first started last time... but I guess two weeks was a little too long of a break.  My calves felt like rocks the next day...  although I didn't just do Interval.. I ran that evening too.... it's been a couple days and now I feel great already.  Since it's summer time here in central Texas I am hoping to keep up with Insanity and start running in the evenings as well.  If I cant get help with the kids I'll be heading to the gym.  I have my kids signed up for free day care while Sean is deployed.  They also have Zumba.. which to tell you the truth even with day care, not sure I even want to give it a try.  My friend Ladoshie tried Insanity though so now for HER I just might have to try. We'll see.

Ok, since I'm a mom and hopefully there are some moms that follow my blog.. I'd like to start posting some cute things that I do with my kids and maybe some of the funny stuff they come up with.

I signed them up today for T-Ball...   I wasn't sure they were going to have two open spots for both my 3 and 4 year old.  I was really hoping though cause I saw they had a team for 3 and 4 year olds.  I thought that would perfect.. one trip, two kids right!  Well they told me when I got in there they weren't sure.. they only had one opening each.. but on different teams, different days.. long story short another lady said they'll talk to the director and hopefully get them on the same team.  I told Carley that if they didn't have room for her I'd get her into Dance.  She's the three old.  Colton is four.   She reminded me of myself... the first thing that came out of her mouth was NOOOOOO!!! Then.. "I want to play T-BALL"!  I was like wow.. ok that a girl..   I never played sports BUT I was NEVER a dancer.   I wanted to play with the boys!  Maybe that's why I'm so tough these days... everyone tells me they don't know how I do it.. (Stay home with three small kids, work out and keep up on my hobbies) while Sean is deployed.  BTW.. I also have a 20 month old! I never thought I'd be doing all this.. but I guess when you have to, you find a way. Anway.. I just thought it was cute.. maybe she'd like dancing though if she just tried it.  I always make my kids try something before I let them make a decision about it. 

I'll hopefully be posting more recipe's in the near future as well.  Keep an eye out for those.  Also, PLEASE if there is something you like and/or try.. I'd LOVE to know.  If I get a response I'll definitly keep it up.  I guess maybe that's why I haven't done anything on this blog for awhile.. I feel like no one really cares or wants to read what I have to say.  So, if you have a comment or a thought please post it!  I love to hear from YOU!  I'd also like to post before and after pictures of people that I have inspired.  So, IF you feel comfortable posting them please send them to my email so that I can post them.  My email is sheilah@wiktel.com

Sweet Potato Beef Stew- 400 cal. meal


This is a great meal for those working out to P90X or Insanity!
27 grams of Protein per serving and 0 trans fat!

1.5 or 2 lbs Beef Stew chunks
3 large raw Sweet Potatoes
3 or 4 Large carrots
1/2 bell pepper
onion
Sea Salt
Pepper
Steak Rub

Warm 4 cups of water in crock pot

Roll beef chunks in 1/2 cup flour, Steak Rub, Sea Salt and Pepper
Brown flavored Beef in 1 TBS of Olive Oil

Place in Crock pot on high until hot, reduce to low for 3 hours or until 
vegetables are soft.

Maple Oatmeal Muffins

These are so good with some butter and tea for a morning brunch and only take 10 minutes to throw together!

2 eggs
1/2 c. Brown sugar
1 1/4 c. buttermilk (substitute whole milk)
3/4 cup maple syrup
1 1/4 c. whole wheat flour
1 1/2 c. rolled oats + 3 TBS for sprinkling
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

preheat oven to 400 degrees F.  Grease muffin tins or line with paper. 
Makes 12.  Bake for 20 minutes

Breakfast ALERT!

I was inspired by my good friend Micah to try making granola and eating it for breakfast after my work outs! It was so fun to make and I look forward to enjoying a healthy home made breakfast every morning starting Monday!

Here's the recipe I made up by somewhat following Micah's recipe (didn't have the same ingredients but made do) but it turned out amazing!!!!!


Mix dry ingredients
10 cups Old Fashioned rolled oats
2 cups coconut
2 cups honey roasted sunflower seeds
1 1/2 cups Wheat Bran (wheat germ) would be healthier yet.
1 1/2 cup Raisins (all I had)
1/2 cup flax (ground in coffee grinder)
1 1/2 Walnuts (ground)

bring to boil
1 1/3 oil
2 c. honey
1 TBS Cinnamon

pour over dry ingredients and mix well. Spread thin over cookie sheets and bake at 325 for 20-25 minutes 
I had this huge cheese ball container that I had saved and didn't even know what to use it for.. it's so big that next time I'm going to double this batch and it will all fit perfectly! 


I would have put more flax and sesame seed if I had them.  You can put whatever you want actually. You can put dry milk, craisins or other nuts or dried fruit that you like. I'll probably try something a little different next time just for fun!

Giant Focaccia Sandwhich Recipe

I copied a friend the other night and we both made this very good flat bread that she found online. Even if you've never made bread... you should definitely give this a try as it was extremely easy!  I made mine with pure whole wheat flour... and it still turned out. I recommend letting it rise twice like the recipe says especially if you use the whole wheat.   Mine isn't as pretty.. I didn't have a round pan so used a 9x13 inch cookie sheet and folded the dough over so it was only on half. It was about the perfect thickness.  You can add whatever filling you like... I used chicken, lettuce, cheese, mayo, mustard and tomato (not in the pic)
